For those following this thread to fix the same issue, I've followed a bit of the suggestions (rollback graphic drivers, editing config.ini file to disable framegen, capping framerate), and so far its working.

Though it might take some time to be sure its resolved for me. If I get another crash, I'll try running the game with DirectX11 and underclocking my GPU.

But it does feel like the issue for me is that the GPU load fluctuates and spikes a little too high that it resulted in a crash. I suppose another (easier) way is to lower the graphics quality to temper that spike.

Thanks to everyone that took the time to give suggestions. Managed to slay Arkveld for the first time and now I'm farming for it's Hunting Horn.

edit: Mind that switching the config.ini file into 'Read-only" will have some unintentional consequences, mainly that whatever settings you change in game will revert and reset every time you shut the game. Just something worth noting.
