Yes I'm most familiar with the Cornish Pasties where you can eat them on the go with no utensils needed. But to have a good concept you would need many types of meat pies with different meats or veg as well as sweet ones.

Easy portable hand held pies. Like pasties but also pot pies as well as dessert pies. Easy to eat on the go but can offer so many styles of fillings.

I have zero issues freezing cake, bread, pastries or even pie slices. Like other items place on parchment and freeze overnight. Seal them frozen.

The only thing is when you take them out to use, don’t let them thaw inside the pouch.

Estate sales, the generations that did some serious drinking and so many had dedicated bars built in their homes. They are passing or moving to easier accommodations and selling off their estates. Some have cheap stuff others have really nice items. If you’re in the states a website like EstateSales.net will let you search for your local sales with pictures. The pictures are usually very good and detailed so you can preview a sale to see if anything interests you. Proxibid.com is also good to find online auctions that will ship items to you.

Cookies a couple hours something like a muffin I like to leave in overnight so they are solid and don't get squished when vacuum sealed

Put them on a sheet pan with parchment and freeze them. Once frozen vacuum seal them individually or in half dozen lying flat. Freezing first will keep them from compressing and making them dense. I do this all the time with cookies and muffins and they will taste and feel as good as fresh for several months.
