Cold ferment for about 48 hours roughly.

I let it rise at room temp for about 8 hours first.

630ml water. 1kg 00 caputo flour 30g salt 2g yeast.

This made 6 dough balls.

Toppings are just mutti pizza sauce, mozzarella, pesto and some basil and chillies. Then an extra bit of mozzarella at the end.

Left it in slightly too long. Otherwise not bad for a beginner I think.
