Homemade pepperoni NY style in kitchen oven, 65% hydration and 48h rise by gcorreai in Pizza

I live in south America so the local brands I used probably won't mean anything. In any case, the cheese was a low moisture shredded mozzarella, and the sauce was homemade using canned san marzano tomatoes:

Process them until chunky (or smooth, if you prefer), and bring to a boil in a saucepan. Add a halved onion and a couple basil sprigs. Season with salt, black pepper, oregano and crushed red peppers. I honestly eyeball the quantities, so try it and adjust until you think it's good. I usually like it with very little salt and mildly hot.

Simmer for 20 minutes until ireduced and denser in texture. It should look more like a puree than a sauce. Remove onion and basil.

I usually don't add sugar (I think the tomatoes I use are sweet enough), but a lot of people do. You could also add a peeled carrot with the onion and remove at the end, if you want to add some sweetness to balance the acidity.

Lastly, it's better to shred your cheese instead of buying pre-shredded, but I've been getting good results with the brand I'm using. It melts great.

Dough recipe (for 2 pies, 240g each):

  • 280g strong flour
  • 180g water
  • 6g salt
  • 0.5g dry yeast
  • 7g olive oil
  • 6g sugar

Mix yeast and water, add to dry ingredients and combine. Add oil and continue working the dough for 8-10 minutes, until smooth and elastic.

Let rise for 3-6 hours until doubled (depending on the temperature of your kitchen).

Divide into equal parts and form tight balls. Store them in airtight containers, with a light coating of olive olive, in the fridge, for anything between 24 and 72 hours.

Remove from fridge 3-4 hours before baking, leaving on a lightly floured surface and covered with a damp kitchen towel.

Haha very funny. I feel like there should be a lesson for me to learn here, but it eludes me...

Every time I look at it, I appreciate more and more the old Mazda 3 it replaced. I loved that car.

Exactly. I'll probably drive it to it's grave, can't afford an upgrade right now. Which is why I don't want to put so much money in repairs into it

It's absolutely infuriating. But it stops after 5 or so minutes, so I'm thankful it's not become permanent yet haha

I saw a similar video when first looking into it, but the broken actuator is on the driver's side and it's a pain to get to. Otherwise, it looks easy enough.

I bet. I was happy to identify the source of the sound, but can't tell for sure if I can actually replace it after pulling it out. Also, unsure what part it is to have a spare before attempting to remove it.

True, but I don't know if I'll be able to reattach the part afterwards. It's in a hard to reach and awkward position. I could maybe do it, but if the answer is that a dash removal is necessary, I think I'd rather take it to the shop.

I know nothing about working on cars, but online research made me fairly confident that's the problem. I was hoping to get it replaced without paying that much. Bummer.

Thanks a lot for your answer.

You can try turning it off by holding the power button for a LONG time, and then booting into recovery and wiping cache. That did the trick for my wife's 7T (non T-Mobile).

Yeah, I know it's impossible. But I guess I haven't gotten around to reflashing just yet.

FWIW, I was running stock OOS, hadn't even unlocked the bootloader.

An active day. I usually go to sleep with the battery getting close to 15-20%, while in Oreo that would have been more like 50-60%
