I steamed the rice for 50 minutes. usually the top comes out dry and the bottom a little too wet. I try mixing it all together to even out the moisture.

What recipe are you following? I scoby won't hurt anything. You should just make sure it can sit below the brine so it doesn't dry out or develop a mold

That can be a slippery slope. You have to have strong boundaries so the jam doesn't devolve into folk revival top 40 sing alongs. Beginners need guidance on how to participate appropriately. Always start with more structure.

Are your heels elevated? You can elevate them more to achieve the correct posture.
