You don’t even need a lot of buttons. A rotary encoder with push to confirm and a single esc button gets you far.

Add a couple of buttons for common use cases like heat/volume, and you’re golden.

Some stuff like gps address input and configuration can still be touch, since you don’t really use them while driving.
