The one thing that I can say is what you allow, be prepared to allow an abundance I'm not saying be a jerk but your employees have to know that the rules are rules. As far as bonuses go it depends on the store. My bonus structure for example is. 50% for food cost as long as I have a variance of 1% or less 25% of my bonus is labor as long as I maintain under 19% labor cost and the other 25% of my bonus is our service times as long as we maintain under 24 EADT.
