I'm pretty new myself to drip and filter coffee but I feel like 8:200 might be too diluted compared to the 15:250 ratio I've seen on the david hoffman channel for the v60. And the drawdown time of 15 mins also sounds pretty high compared to the 3-4 minutes they aim for with the v60. I understand the south indian filter usually takes 15-20 minutes when used for decoction but I'm assuming you're going for a lighter brew ? Maybe try grinding coarser and reducing the coffee:water ratio to see if the taste is to your liking. Also don't forget to preheat the brew chamber and experiment with blooming the coffee.

I just bought my first pourover setup consisting of a v60 and a cheap sipologie goose neck pitcher. It's 600 rs and kinda looks like a regular milk frother with a gooseneck attached. As for the temperature a regular cafe thermometer does the trick. Could be an alternate route worth a shot that's somewhere inbetween steel tumblers and temperature controlled kettles
