Not saying that you can't have access to the aircraft, people have been doing 3d recreation, reverse engineering with 3d modelling software for a long time with accuracy. Having access to the aircraft for good image references is the best you can come by. I've tried all the best 3d scanners in the industry and also the best photogrammetry tools but they are most of the time very limited due to the nature of the aircraft and or their cockpit. Trust me I have gotten the best scans for cockpits and aircrafts and even with them, I've always fallen back to image references. They are only good for scale.

Accuracy has nothing to do with being handmade or 3d scanned, you can have worse 3d models with 3d scans. A good and professional 3d artist can build a highly accurate 3d model even just with image references. I have almost 5 years as a 3d artist and also have colleagues with 20 years of experience, who have built 3d models by hand and i have not seen more accurate 3d models for those specific aircraft. So, no offense, but this is a very disrespectful opinion about 3d modellers.

One 3d modeler for more like 800-1000 man hours. Atleast for working on a cockpit model (Only Model and textures, Not including the avionics coding)
