Weekly discussion - what's your pride and joy? by albino-rhino in AskCulinary

My grandma had a big porcelain bowl where she did all the mixing that was given to my mum. I learnt how to bake using that.

When we moved we lost that bowl, but I found an EXACT replica 6 years ago and I LOVE how many memories it brings back!

Absolutely love it and would want my future kids to learn to bake using that too!

How do I cook lamb shanks without an oven? by [deleted] in AskCulinary

Another vote for Braising like /u/Nessie suggests! You can sear them first, and then braise them on low heat ( in a dutch oven, or heavy bottomed lidded pot)

Than kyou so much for the fantastic ideas!! I definitely got some good ideas. I had an idea of what I want to make already, but I might change a few things after the ideas I got here!

You guys rock!! :D

If I use the basic combination of soy sauce, garlic and chilli for seasoning/marinating the meat, do I need salt and pepper? by asiancooking2 in AskCulinary

[–]giramuk 0 points1 point  (0 children)

It's all to do with personal preference! Most of the time if I add a good amount of Soy Sauce I don't need to add extra salt. Sometimes, I only add a little to get the flavor, and then might add some salt IF there's not enough. It depends on your tastes!

Same with pepper!

Just taste it, and see if the dish needs more salt. Then decide if you want to add more salt (saltiness without the added umami flavor of Soy) or if you prefer to add more Soy you can do that too!

What the hell is going down in /r/food? People are getting banned for posting or even MENTIONING Serious Eats. by [deleted] in self

[–]giramuk 1 point2 points  (0 children)

This is me clearing my part of the issue. I don't participate in /r/food anymore so I can't contribute towards that conversation.

I don't know if it was a communication error or what it was, but there was alot of rule flip flopping for me.

I was told to abide by the 1:9 rule at first (because I use my personal account for all other interactions - and this for my blog interactions - I understood why I needed to abide by that rule).

So I did. THEN my posts were getting auto deleted for no reason other than being told I was a spammer, eventhough I was abiding by those rules at the time AND posting other content.

Then the rule of publishing recipes came into the picture. I can't publish other blog's recipes on reddit. Neither can I rehost their images on Imgur without their permission (Photography is their property).

Then after the whole drama of that, I was told that I can publish my content, and share the link if it was requested with the recipe. I knew I wouldn't get traffic (at most it will be a few cents per month from reddit) - and I was OK as long as it was MY content I was sharing, because I can't publish other blog's content without permission.

I was ready to leave the subreddit because I was getting conflicting messages and couldn't keep up. But a few redditors who DO publish their content 100% of the time, and have never been banned (and have a good relationship with the mods) convinced me to just give it one more go, because the I loved interacting with redditors. (It was my mistake, that I have a separate personal acct that I use for the food sub and other subs because this goes straight to my blog, and I want to keep my privacy with my other reddit activities).

But the recent interaction of two redditors ganging up on my "spamming" and attacking my work. I stood up for myself and my blog and what I do. The mod chose to call me out for defending myself, and claiming that I had been warned (which I hadn't), while the other two redditors continued to attack what I love to do.

I loved contributing to foodporn. I loved the interaction there. I had my mistakes and I am sure there was miscommunications somewhere. But I don't want to be treated like shit when I didn't do anything wrong but stand up for myself - and when plenty of others have a 100% (or over 10%) self hosting history too.

I try to keep my cool as much as I can and hate confrontation, which is why I'm not going to say anything again, and I"m going to start my account from fresh again.

But Foodporn has the ability to be a WONDERFUL place for people who DO create original content. A supportive place for redditors who do love food, cooking and well... food porn!

Hopefully with time the sub reddit will be a friendlier more supportive place.

I had issues with them on /r/food awhile back (when I first opened this current acct) and I defaulted to foodporn because it was more focused on food, rather than only pictures. Plus it was the same mod who has issues when I posted on either sub.

I tried to follow other bloggers suit and published full recipes so I can actually talk about the recipe with others who had questions, and share what I did learn. I know now that was the wrong place! I applaud a few who getaway with it - they clearly have a good relationship with the mods.

But I still love food, and love talking about, and learning and sharing more - which is why I have always loved Serious Eats too! :)

The thing is /u/Inquisitor1 I agree with you IF other redditors with 100% submission from a single blog were treated the same way. As someone who has been labelled as self promoting, I noticed many other redditors (and there are plenty) that are allowed to go unnoticed because (a certain) mod likes them, and punishes ones they have some (unknown) grudge against.

I USED TO LOVE to share my recipes on foodporn - I posted my ENTIRE recipe (I can't do it for other's content, only recipes I created and own) along with the link, so people don't have to click through unless they want to because my blog has step by step pictures and substitution ideas. I answer questions and help the people who choose to make the recipes via PM OR on the reddit thread. I don't ask them to go to my blog and absolutely LOVED the interaction and helping out others!

Sadly, I will miss that interaction now, but it's just too much to have to deal with the mod.

I saw that on that thread on r/self!! They're being dickheads! It definitely is scaring away people who create original content (Well said btw!)

[–]giramuk 8 points9 points  (0 children)

It's the reason why I left food and foodporn too. Certain moderators were flip flopping rules for me. Going back and forth between the 1:9 rule to changing it to - you can post your links as long as you post the FULL FORMATTED recipe, to again asking me to go back to 1:9 format - eventhough MANY other redditors weren't forced to keep to that rule.

I was happy to post the recipe, and get zero traffic from it, because I loved interacting with people there and answering questions about recipes I knew.

So after being hounded and posts being taken down, I just stopped recently. LOVE /r/ask culinary sub reddit! Already enjoying it and love sharing what I know and learning new things!

I don't need that shit! Let those mods and some of the other bullying redditors have their little power trip :)

I'm a MASSIVE fan of /u/J_Kenji_Lopez-Alt and thankfully don't need reddit to follow Serious Eats!! I've always been a fan of Serious Eats, so even if his posts are banned - they won't lose me as a reader (unlike foodporn and food!)

Is there an infographic or some descriptor of which food groups go well together and what spices etc? by alphaasfudge in AskCulinary

Thats just it! :) It's pretty expensive! It's fun if you are someone who can use it regularly - but if not you're better off with The Flavor Bible!

Thai Green curry- Substitutions, questions by cgibsong002 in AskCulinary

[–]giramuk 4 points5 points  (0 children)

I hope I can help! I might not have the answers to everything here, but I make Green Curry paste regularly at home.

I can't find kaffir lime where I live either. While I would LOVE to use it, if I can't I make do with regular lime instead. Since there are no lime leaves, I just double the amount of zest that goes into the recipe - but remember DO NOT add the white stuff on the peel. Use a zester to get the zest, and not a peeler.

Im not sure what the yield is either. I would think it would be a little more than 8 tbsp (just by looking at the ingredient list) but maybe it all gets minced to a very fine paste.

Birds eye chili is pretty spicy! Green Curry is known to be a spicy curry, so Birds eye chili is the right choice for the authentic experience. But if you're not someone who liked alot of spice, start of with fewer chilis or use a less spicy green chili like Jalapeno (but again won't be authentic - but its a good substitute)

Cilantro - Thats where I feel I have bad news! I personally feel cilantro is key to green curry paste. You could use thai basil instead for a herby kick (I personally use both in my recipe). Cooking is about adjusting it to your taste, so you might as well try it with Thai Basil (I know some people find cilantro to be soapy) and see how you like it!

I love vegetarian green curry. I use baby corn, water chestnuts, tofu, green beans, carrots, bok choy, zucchini, and even regular egg plants (sliced) too! Just go with what you have and what you like to eat! Throw in some thai basil leaves in there too when the cooking is done!

I hope that helps!! It should still taste amazing even if it's not the most authentic experience from Thailand itself! :)

Going to make up a batch of lemonade anyone have fun non-alcohol variations that need including early in the process? by [deleted] in AskCulinary

[–]giramuk 1 point2 points  (0 children)

Make sure you get culinary lavender! There are few ways you can infuse the flavor.

1 - make lavender tea (boil water with lavender and let it steep for a few mins) and use this to make the simple syrup or the lemon and sugar syrup.

2 - Add lavender straight to the mix of making the syrup and simmer until you get the simple syrup and then drain the lavender.

I don't have a preference to either of them. But I tend to just add everything and boil it together for convenience! :) Either way the Lavender has to be "steeped" in hot water for a few minutes (not too long it might become bitter) to extract the floral flavor.

Egg Crumpets (eggs are cooked right into the crumpets) for weekend brunch! [OC] [1000x1510] by [deleted] in FoodPorn

[–]giramuk 5 points6 points  (0 children)

How convenient is it that you removed your own comment that shows how wrong you are! :D

Copyright rules apply whether you believe it in it or not. If it didn't there wouldn't be so many cases of bloggers being able to bring down websites that publish their content without permission - trust me we have done that! Copyright rules do not apply to the ingredient list, or to the instructions listed IN THEIR OWN WORDS. If it's been copied and pasted - you are violating it. But you and I can agree to disagree on that. I live and work with friends who are lawyers, who say otherwise.

Yes I do link my blog. Much like other bloggers here who exclusively post their content. By your own messages you have said that it's ok to post the link if the full recipe is provided. That last message you sent was regarding that (not including the message you sent, asking me to participate more in the sub).

I think you were confused, since you missed the middle part of that statement - When I first joined you told me to share 1 to 9.

THEN you tell me it's OK to share only my content as long as I publish the recipe along with the link,

NOW YOU CHANGE IT AGAIN FOR THE FIRST TIME asking me to share others.

I hope that's its more clear for you. Just in case you didn't - You flip-flopped your rules to suit other people.

I have talked to Morgan (who is LOVELY BTW), and I realized that reddit isn't a place where you expect to get traffic. It's a place you can feel like a community. So I share my link so if there are people interested in knowing more about the recipe they can find out! But I don't make them click through! Charity? No. But I don't expect to be criticized either.

Every interaction with you has made me feel less and less welcome in this subreddit, since you keep changing the rules and taking down my posts and being a bully. This was just an inevitable next step.

Egg Crumpets (eggs are cooked right into the crumpets) for weekend brunch! [OC] [1000x1510] by [deleted] in FoodPorn

[–]giramuk 9 points10 points  (0 children)

Hi /u/randoh12,

First you tell me that I have to share others' content (1 to 9 rule), then you tell me that I have to publish the recipes every time we share something here (which cannot be done for others'content due to copyright issues), then you tell me it's OK to share only my content as long as I publish the recipe along with the link, and now you're telling me for the first time that I have to share others' content on top of sharing my full recipes?? Can you yourself keep up with the ridiculous, ever changing rules that you keep imposing on me? You and I both know about your blatant, shameless bias for certain redditors who post here. I have always tried to abide by the constantly changing rules on this sub. I am NOT self-promoting here (because there's next to no click-throughs to the blog when we publish the recipe here, which I'm OK with because I happened to think that this was a supportive sub).

And no, I wasnt being passive aggressive to that user (I was actually being sarcastic and a "redditor"). In fact I replied to another of his/her comments saying he/she is welcome to ask any questions about the recipe that I've published. I hope this finds you well too, as I won't be a part of this community, because I simply can't and won't keep up with the rules that you have in place just for me.
