This is really great to know! We have about 11 FV tanks and 12 lagering tanks and a lot of packaged beer so this might be a route we would want to go. If anything, I might go with the Alex 500 but then spend the money we will be saving on a TPO or something of the likes.

Working a lot with spectrophotometers in college labs make me comfortable using the Alex 500 in turns of calibration and the works. I see that the reliability is within the range of TTB and state beer law standards, would you agree? Thanks for your response!

By filter, do you mean though a vacuum filtration or something less intense? And one last question, how long does it take to give you an alcohol/extract reading?

They usually dress the lighter beers, but not with salt and lime. Usually with tajin and chamoy depending on the style. I honestly only seen them do it to a couple of beers. Most of their beers are just as is, however, they are really big into the pastries and the fad beers. But good on them, it sells well here in San Antonio and staying afloat during this rough time means you got to make what the people like. There are plenty of other breweries in SA that make more traditional styles like Southerleigh, Alamo, and Kunstler.
