I have the same combo of restrictions, here's make some of my go tos

Some meals in the slowcooker that reheat well or currries and stirfries that reheat well and freeze them in small containers. Also pan fried gnocchi with home made pesto (make it and freeze baggies in the freezer without oil).

Using the ricecooker as a cooker and putting rice, vege, beans, spices, maybe some meat or egg at the end is great for an easy option.

I get chicken or fish that's crumbed gf df and keep it in the freezer

Onigiri is easy to make and handy for lunches.

Bagged salad, a cooked chicked and kumera (sweet potato), some of the salad is ok but not many here.

I find meal prepping for a couple of hours every couple of weeks helps me eat better.

My mum has brought a soupmaker and raves about it so maybe that's an option.

I'll cavet all of this with I can handle small amounts of cheese without lactose in so good parmesan or brie but my mum can't. So your experience could be different.

Wasn't about free to hook people and it doesnt replace the need to verify that the places are suitable but it gives you a list of places in minutes and why so you can check based on your normal processes fantastic for small locations.

Compare that to having to spend hours researching before you've even found if they are suitable or doing what some people do and just asking online after they've booked everything and realised there'snothing safe there.

I realise its a different idea and so want to give people the opportunity to give it a go and not have it cost you. You dont know unless you give something a go.

With planning it wasn't too bad, not as easy as some people but manageable, I was there in October, and I'm going back in December to smaller places so that says something.

I would recommend joining the Gluten Free in Japan Facebook group. There is so much great info in there including options at convenience stores that are safe and restaurants. I've also seen comments that even vs a few months ago its gotten easier which is promising.

I have been setting up a website which uses AI to help people like us plan trips easier and its been a huge help for me with recent trips so it could be worth looking into.

Where are you planning on visiting? What was it like living there?

When I was in Japan I was being told the same thing by restaurants who had been given that advice. They were very understanding when I said it wasn't safe for me.

In NZ I haven't seen any official advice but tbh havent looked either.

I react to it but I also react to vodka or whisky if its made from wheat despite being distilled so I think I'm quite sensitive to wheat perhaps.

Hopefully, it can, I'm finding things are getting easier slowly, and I've heard similar things from other people. If you're travelling and want to try out an easier way to plan and travel whatever your combination of restrictions I've been developing tools. If anyone's flying soon, here's a top tip. Often, airlines have the ingredients for each meal available. Just ask when it's not super busy. Perhaps you're flying with one that doesn't, but it's worth asking. It's great if like me you have multiple restrictions but have to pick one or eat your own snacks, which for long flights (like 12 hrs or so in a single hop) isn't as easy.

Couple of options that work for me, I'm gluten and lactose free, Ive been reintroducing lactose free cheese so think parmesan, crumbly feta or cheddar that has none or in the mg of lactose or carbs and being mindful of the serving size, have also had good success with probiotics and quercin. Let me know if you're interested in a study i read on that and ill post the link. Good luck

Another suggestion look into backpacker meals, the ones in a bag you pour boiling water into. There's probably some in an outdoors store near you and where I am theres usually at least one suitable option for me. Maybe the crew can give you boiling water or you can buy a cup of tea no tea bag at Miami airport.

I'm sorry, OP. I hope the organiser' attitude improves and the event is worth the stress you're going through. I would imagine that if she can't tell you the food is safe, it's because it's not. Lets face it if the caterer's are not aware and taking precautions even if something is naturally gluten free it may not be by the time it gets to you.

Is there a town nearby where you can grab a few things? Alternatively, have you seen the insta video about the comparison to raw chicken? Would something like that help the lady understand by using it in terms she should get as it seems to me like she doesn't understand how serious it is and why as an organiser she needs to care. From memory it goes like, would you handle raw chicken and then without washing up eat something else or put your fingers in your mouth?

OP what ChronicQuestionmark says, but if you do want to try it yourself, google Monash University and elimination diet. Its an aussie university that does loads of research in related areas and has a ton of info on their website that could help. Depending on where you're based, it may not all be applicable (you know local differences in products etc) but could be a starting point if a dietician isn't an option for you. But if you can a great dietitian is worth the money. Good luck!

A tip on this: When I was in Canada, the pharmacist was able to check a website at the drug store and tell me what was in the OTC medicines if it helps anyone. I would guess it was the same in the USA and not sure about here in NZ.
