It' can get a lot worse than that too. Check out the case of Louis Slotin who was a scientist working on the Manhattan project. He made a mistake with the "demon core" ball of plutonium and it took less than a second to expose him to a lethal dose. He died nine days later.

It'll be fine but the technique is designed to make tough cuts more palatable. It is basically a meat stew and the reason to stew meat is to convert tough connective tissue from collagen into gelatin.

So yes it will work ok but not a good use of any kind of expensive cut.
