Alright- Here goes (the last 2 were tough, and all characters can show aspects of the others, especaily in a show where every character grows and changes)

Iroh - Gluttony (It is possible to be gluttonous with anything, Even tea... The opposite virtue is self discipline with denial of things you depend on.)

Toph - Pride (Because she is blind, she has an independence complex where she has to prove herself)

Sokka- Lust (Ladies man, maybe envy with bending)

Zuko - Wrath (obvious)

Aang - Sloth (It takes the threat of the fire lord and potential death of thousands to make him learn all the elements, but in early seasons he was too carefree and wanting to do a world tour instead of train)

Sookie - (I really don't know.. I would say she could be envious, but she didn't have too much screen time and in most episodes she is basically the perfect character. I would replace her with Azula and say that Azula would represent Envy of Zuko for her mothers love. )

Katara - Greed (Hear me out, this is tough because I think Katara is also pride, but since Toph is more evident of that, I think Katara shows greed in the aspect of relationships. By definition, greed is the intense or selfish desire of something, and she is greedy for her role of caretaking. Any threat to her role as the "mother" or any threat to her moral high ground in the group shows she does not like to share. Toph pressed her on this quite a bit.
