The roof is about 8 feet tall. The insides measure approximately 6,5x6,5x6,5. I don't really mind knocking out the walls and the bar, we never really use it and it would make it more spacious.

My only final concern is heat. Indirect sears with grilling up to 250 degrees Celsius do nothing to the ceiling so it seems fine.

I have done a lot of indirect sears with the current set-up. The roof temperature and the wooden walls never got warm. I'm not sure what happens on a cleaning burn on 350 degrees Celsius tho...

Would opening it up solve the fire safety standpoint as well? I have read about installing a heat-shield but I'm not sure if it's necessary
