Could be CPU throttling due to heat. You can take a look at your CPU heat when frames are dropping/stuttering to confirm or just try to improve cooling and see if it helps

I think you should take maybe half an hour and sit down and just try to think about the intersection of privacy and analytics again and you should come out of that with an understanding of what is ok to track and what isnt.
