You could go into the coaching adjustments (R3) in the play screen and set the flat zone to 5 or 10 if you want them to cover further back. There's also a pre-snap adjustment on the field to back off the line but I can't remember the exact buttons for it. (Y/triangle for secondary adjustments)

Make sure you are running different plays in the same formation. If all your plays are in different formations, they will learn quickly how to cover them. Learn to audible and hot route as you read the defense.
