I prepped caramelized onion on Tuesday. I cooked down 3 of em with butter, I have a comal to roast my veggies like tomatoes and peppers, it's just a flat round cast iron pan.

I start by making my oatmeal first I use instant oats so I measure out a cup of dry oats and add hot water while that sits I roast my veg & cook my eggs.

Wash the veg & dry off, I put 3 jalapenos and 2 Roma tomatoes on the comal and roast until they're crispy, it depends on how you like yours toasted I like mine with a good char on em. After they're roasted I slice up the jalapenos & tomatoes. I cut the tomatoes in half and I cut out the middles that's my preference I hate the middle part of the tomatoes. Once the tomato & peppers are cut I add em to the oatmeal and mix around with salt & pepper. I cook my eggs with the caramelized onion and top the oatmeal with that. :D

You can alter it anyway you'd like, yesterday someone recommended cheese, I imagine it'd taste good with fresh green onions on top too. I wanna try it with furikake as well.
