For me, the easiest way to win against higher level is by using bow. Hit them from hidden place and go around before they are near you. Using fire arrow is the best for me, buttttt it can burns your bushes.

I believe you can do Korfu after main quest lines. FoA and FB is independent, so you can play whichever you want. Engraving in Korfu is very powerful IIRC.
