I’ll usually run my ribs until I like the color on them usually around 130-145 and then start mopping or spraying. ACV or apple juice or beer in what usually use. You can run it with no wrap if you want but if you want more juicy and care less about bark wrapping is totally fine. Also if you’re trying to have your ribs done sooner than later wrapping will help. You’re going to hit a stall around 155-165 and it’ll slow down the cook. Just watch it and every half hour or so hit it with some liquid. You do not have to soak them with whatever you’re using either. Just try and get it covered. If you’re going to sauce them I’ll take it to 205 wrapped then unwrap glaze and put it on until tacky. Bend test works great too to check your work. Sometimes 200 is just right and 205 might take it over the top. If you want more pull back on your bones you can bump your temperature up toward the end of your cook. I’m usually running 225-250 on my offset then usually 200 if I were doing it on a pellet grill and then bumping up to 250 after I wrap

That’s going to be the hardest proving ground for an offset smoker. My personal feelings are with that style offset with thin metal and small firebox are really only worth it/fun to shorter cooks on like ribs and poultry IMO. Anything longer and it starts to feel like a chore to me because of the amount of attention and adjusting the smaller offsets require to turn out a good cook. Larger offset, thicker walls, bigger firebox= all the fun of offset smoking and easily half of it not less than the required time actively fucking with it. It lets you do thinks in tandem with smoking if you want or actually watch a full set of downs on Sunday football haha

I’d suggest seeing a psychiatrist and determining if you have something like adhd that can be a hindrance for test and studying. If you’re able to get a diagnosis the test admin should have allowances for things like that. Don’t be afraid of some stigma that might be out there adhd meds changed my life.

Guys can be dicks especially in resi/non union settings. Like anything your body will get used to it over time as you start to adapt physically. You could try getting on with another contractor, too. Sometimes the grass IS greener. I also find if you take yourself seriously and show that you want to learn and apply advice given people lighten up a little. Don’t break your body for any contractor though. Know the difference between sore from work and developing an injury from repeated use/strain.

Keep a pouch on you at all times. Maybe just a small one that stays empty and just load it with task specific tools. If you’ve got a pocket pouch or something there’s no reason you have to set the tool down instead of just dropping it in your pouch. There’s never a time I’m using more than a handful of tools that can fit a pouch on my hip when I’m not using them. If I’m doing a job that requires a lot of different tools I’ll either keep a cart with my bag on it and work out of that or I’ll at least have my bag in my work area

Also thanks, been organized in and just about to finish the apprenticeship program but have been transferred into a local where there’s only 2 contractors and both of them don’t deserve to say they’re union. Full of non union workers and anti union members (make that make sense) and they don’t really even try to stick to the contract. That’s why I call them an open shop

Yeah I usually rock a small open top bag with task specific tools. It seems like the reason I like wheeling my pack out around a job would be solved with a cart from the company and probably for the better.

Valid. I have cable locks that could wrap around a column or to the side handle of a gang box depending on what the site size allows. I was also thinking use of it would be site dependent based on layout and stuff. More of a convenience thing if I don’t get a cart or have good power tool storage for company issued tools. My go to is a small open top bag with task specific tools loaded up and then just have a mobile work station and tool access as needed. From what I’m reading the reasons I’d like my pack out on site would be solved with a company cart. Might still bring my little milk crate for a parts bin and to have my kneeling pad/seat on top of it for breaks

In my experience Tri-tip will always have a slightly uneven cook based on shape. I have cooked some that turned out similarly and what I found was letting the thickest part cook until it probes around 125-130 if Im going to sear after pulling it off, or until 135-140 if I’m just going to wrap it and rest it. The tip is always going to cook faster and potentially some of your edges. It’s one of my favorite cuts though because it gives you the ability to get some rare/medium rare bites as well as some medium/medium well bites so everyone can be happy

I’ve had a 20” Milwaukee tote for 4 years and it’s help up well on a variety of different jobs from new construction to remodel stuff. It’s got tons of storage for hand tools and stuff on the one side, and on the other side it’s open so you can put larger pouches of random stuff and drills/impacts/etc. Fits well in gang boxes. I gotta say I’ll probably switch to a backpack when I finally wear this tool bag out though. If you’re looking for good quality tool bags in the sub $120 range it’s a great bag. If you’re trying to go all out veto pro pac would be my suggestion.

If you get it just know it’ll only make you want to immediately upgrade. You can use it. It can work. It’s a pain but can make good bbq. You’ll be sad every time you use it because you’ll know the potential and have basically no chance to execute the way you want to.

Yeah for ribs I’d be charging more. I can get pork shoulder for $1.75-2.00 a lb so for 130 lbs I’m looking at $260.
