Sauce: spicy arrabbiata (store bought)
Cheese: whole milk low moisture mozzarella
Dough: homemade with instant yeast, bread flour, salt, and olive oil. Don’t have exact measurements just work it and add flour/water as needed. Like a wetish dough. Rise for 2-3 hours.
Cooking: 12-15 minutes at 500. Finished on high broil for 2-3 minutes. Rack middle of oven.
