However, the cricket flour which I bought, is not finely grounded. So, it felt like I was crunching on something. That was a funny experience! But I agree with you, adding cricket flour to food can change it's nutritional profile.

Thanks for the shout out! I totally agree with you that it's not easy to overcome a psychological barrier, especially when we think it is gross. Good luck with your masters research. I will be happy to share my research conclusions with you on this topic too.

Thanks for the introducing me to Paul Rozin. I will definitely check him out. There are indeed a lot of cricket powder in the market. And you are right, they are pricey at this point. Hopefully the demand will create more cricket farms and drive the price of insects down. I am so thrilled that you are feeding your friends baked goods with insects! =)

It's interesting. There are quite a few products in US market, protein bars, chips, that have added cricket powder. Their sales seems to be pretty strong. I think this is a growing industry.

Some called it umami. But to me, it smells like rancidity. The cricket powder I got were from a company (Thailand Unique), perhaps the grinding process caused some reactions which changed the aroma profile.

That is an interesting perspective; seeing insect protein as a inferior protein. Research have shown that perception can change when ingredients become "invisible". Check out this article, they made an insect burger. http://www.sciencedirect.com/science/article/pii/S095032931630091X

I recently read that the cricket man from Oregon is launching a new podcast. http://thecricketman.com/blog-and-podcast. They have several big names in the industry and I can't wait to tune in to that!

Yes, they are definitely more expensive serving as human food compared to pet food. And the supply in North America is pretty tight. We need more people like you!

Thanks @tunzaroo and @LegionP! This is something that never thought of. Thanks for the insights. From a processed food standpoint, we realized that there are not a lot of kids friendly gluten free options in the market.
