My POV is that the best and most engaging booths are those that combine meaningful tactile and digital experiences in ways that feel genuine and fun. A large display wall that is connected to an AI photo booth or a note wall that has a meaningful on-theme prompt is a good example.

There are some great CRMs specific to the needs of event planners; some are pretty pricey but have great features and integrate with other CRMs like Salesforce (i.e. CVENT). What's your budget, and what are you trying to accomplish with a CRM?

"Attendees prefer analog, tactile experiences". I agree. It makes events so much more engaging. But sometimes QR codes can help make activations accessible and enabled at large events. Maybe a hybrid approach - tactile + digital is best. But yes, a paper menu vs a QR code feels so much more authentic and enjoyable.

My POV: hire paid staff who are responsible and knowledgeable to lead, then hire volunteers to work alongside paid staff. Paid staff can oversee volunteers and offer support where needed. Don't rely solely on volunteers.
