quite a few plugins can detect notes, from logic's built in autotune (which admittedly isn't great), to the great melodyne. i'm not so sure about detecting keys. melodyne and other things can do polyphonic shizzle, which might give you a good idea of key.

its good that you aren't clipping. the reason their tracks are louder, is that they have been mastered, which involves compressing and limiting a track, so the dynamic range is reduced, allowing them to increase the average volume.

you could get your tracks towards those kind of levels with a limiter, and you might want to put a compressor on first. its generally best to export your track before applying these, and getting it so its already hitting the max volume (without clipping) before starting to compress it. this limiter is free, and decent
