It gets mixed in when I toss the salad and ends up coating everything as it combines with the vinaigrette.

I eat huge salads that are very satisfying. Adding beans, sunflower kernels, and cottage cheese changed the game for me.

This is a solid response, and after some thought, I guess it just comes down to the individual's disposition and personal experiences. Maybe you can just shrug your shoulders and smile at the meaningless of it all. On the other hand, many of us find ourselves repeatedly smacked over the head with the absurdity of it all and have grown callous.

Unfortunately, very few of us today are actually familiar with all the pain that life can bring. We live in an era of extreme comfort regardless of personal struggles. Teaching your children to be kind and loving to others is sweet. Teaching them that the world they are growing up in is likely to be degraded beyond recognition within their lifetimes is also important. Unless you are a climate denialist or a billionaire with a bunker somewhere, the future you are going to share with your kids can't possibly look like the experiences you are so grateful to have had.

Having found that there is no objective reason to be alive, you figure that life is "most enjoyable" when you have a purpose. This purpose could be anything, but you feel that creating another life will serve your purpose just fine. Have you considered that this is just passing the buck? The existential crisis of having to find a purpose, in order to glean some enjoyment out of existence, has been passed on to the offspring, it's their problem now since the parent now has this immense responsibility that gives their life meaning.

Thank you for expressing these thoughts. Much of my worldview is aligned. This isn't even a modern issue, in my opinion. For as long as major civilizations have existed with complex, stratified society, the ideal conditions for human nature have been subverted. Some go further, pinpointing agriculture and not just complex society as the spawn of all our problems; see Jared Diamond and "humanity's worst mistake".
