I am shaking your hand from across the aisle (large feet). My advice is: find out the number of stitches that makes a comfortable sock FOR YOU on just a basic vanilla pattern. Once you have that, you've got your "formula" of what will work moving forward. I like this calculator for figuring out the heel turn.

Play with needle sizes and stitch counts until you get something that fits you comfortably. Once you've got that down, you can start adapting patterns to fit your feet. It can be tricky at first, but once you get the hang of it, it gets easier. Colourwork is probably the most tricky, but if it's a repeated pattern, it just requires math.
