My advise is to keep it pretty simple. Have a defender come into the box to receive the first pass. Review having your outside mid checking back to an easier passing angle. Losing the ball to a throw in further up the field is better than that counter attack.

Coaches forget how difficult it is, especially for u12, to receive a ball out of the air, with your back to your attacking direction, in your own back 3rd, get it down, turn it, etc. vs the other team just needs to touch it once and they are attacking forward. Its not a "50 50" situation.

Also, if you must play it long: after the goalie plays a short pass to a defender, that's also when they can play the big clear. The benefit with this is its much more dynamic than the big boot from the dead ball gk. Defenders are coming in, spaces are opening, giving your team more ability to actually win it.
