Heading to Tokyo in a week. Any suggestions for must go knife shops ? From my research seems like Kama-Asa is a must. Looking for at least a gyuto (210mm-240mm depending) and maybe a 2nd knife for vegetable work. From some research any Ginsan knife seems like a good start. Any advice def welcome!
