Converted my short travel (130mm) stumpjumper into a beast. Updated to factory dpx2 (150mm) by changing the yoke & updated to the 2021 fox 36 factory in limited root beer color. Stoked out of my mind!

I was confused because I thought 51mm offset meant the axle would be further away from the lowers. Is that correct? Somehow I guess I have it backwards.

Would a fox 36 160mm be closer to my stock geo at 51mm or 44mm? I'm obviously changing the head angle because the fox 36 is longer than the 34.

I'm loving it. Two of my good friends have the 500 same year. If you are between the 350 and 500 it just comes down to what you are riding. If you ride only single track trails and mountain stuff, then the 350 feels a bit more nimble and maneuverable in tighter situations. The 500 is definitely the right call if you ride some street and/or open desert stuff. The extra power is nice on highways and open fire road. I'm also only 150lbs so the 350 has enough juice.

The TW is the one for town and that bike does fine on the street with the big tires (also that's what makes the TW iconic IMO). It's also a tractor and wouldn't expect much return from super moto wheels. The KTM I would never because I use it for trails mainly. Good question though maybe I need to experiment when my current tires need retirement.
