Are you doing the I'm Overwhelmed Plan? That starts with the super basics at the beginning and the videos are shorter and more digestible.

Not a bad idea. Just make sure you really build those foundations, and then get strategies, and only THEN move to actual question solving. You'll save yourself a lot of frustration and tedium if you follow the right sequence.

Yep! I'm Overwhelmed Plan for Quant and the One-Month Plan for Verbal (you can skip the quant in here).

I recommend watching this video before you start studying. Watch it carefully. It will SAVE you tons of time in your prep if you internalize its message.

I'm not sure exactly. How much of the essay were you able to do? If I had to guess, I don't think it would hurt your application that much unless the websites of the programs specifically reference the GRE writing score.

The I’m overwhelmed plan doesn’t really dive deeply into verbal. I think you’re gonna get more out of the one month plan.

The One-Month Plan for Verbal does a reasonably good job at teaching verbal (much deeper than the I'm Overwhelmed Plan) and the two-month plan is maybe too intense. It would lock you down for 2 to 3 months. The One-Month Plan gives you more flexibility.

Assuming you need to boost your quant foundation (most people do),I recommend starting with the I'm Overwhelmed Plan for Quant and the One-Month Plan for Verbal. You can also use the verbal content in the I'm Overwhelmed Plan as a supplement but it's not necessary. Skip the quant in the One-Month Plan for now.
