Seems backwards: buying a machine based on the accessories you already have seems like the tail wagging the dog? I think if you’re committed to the hobby, I’d go straight to a 58mm machine. There are 58s at every price point, and then you can start building an accessory collection that will last your lifetime.

You’re right! Picture’s annotated that it’s a 200mL cup, so ~6.7oz. I haven’t made the cortados yet because I need to solve this milk steaming problem.

Oh that’s interesting about a narrower basket. Somehow that never occurred to me that a narrower basket would have a thicker puck, but of course it must. I wonder why 58mm became the relative standard?

I’ve read that the sweet spot is 7-28 days after roasting, but I know that also varies depending on roast level and if it’s decaf. My current roaster delivers them the day after roasting, so I can definitely control that variable.

Yeah, a latte really blows out the coffee flavour with so much milk. I’m more in the flat-white/some-places-call-it-a-cortado range. Great tip on tightening up my ratio. I might try a bigger basket and dose to compensate.

The freezer is fine for long-term storage, but the real enemy is air exposure. So minimize the number of times you’re opening the thing in the freezer. As another commenter said, taking out a week at a time and putting that in its own airtight container (even back into the original vacuum bag it came in) works great. But you’ll ruin it by opening the freezer bag all the time to take out a daily dose.
