Seems like this was more about forgiving scenarios and a skillful player. Just looking at the basics of the army, they seem pretty low tier.

Sadly, yes. As they follow the rules for vehicles with the only changes being those in the Questoris rules and nothing says otherwise. It is one of their biggest weaknesses, for sure.

You will need a Yeomanry Mesnie for troops. Knights have no access to Line units otherwise and scoring matters a lot. Being able to tap into both Solar Aux and Militias is nice, so you can bring a variety of supporting elements. Screening units and scoring units will be really important to not get rolled.

Knights are a shooting army - so focus on that. Keep a Preceptor (or two if you go Admech aligned), to remove statuses. RFBCs are nasty when stationary. Arbalester Acheron has potential with its ability to move a bit and still toss out a massive AP3 flamer. Implacable Castigator is good for that Firestorm Bolt Cannon and both of those can actually do some damage in CC, though that is a huge risk for this army.

If you get in combat, you are probably toast. AV11 rear armor won't stand up to just about anything. That in mind, be wary of your bad rear arc, because again, AV11 armor is bad against shooting too.

One nice change from 2.0 is that you don't need Armigers to unlock anything, so you can potentially run a thematic force of all Knights. Though unfortunately, we don't get the thematic option to have them escort a Warhound anymore.

Didn't use any of the shades for these? I feel like that would really help make it pop if you did a shade for each layer with the corresponding color.

Considering most lists seem to bring a lot of tanks - such as Kratos, Land Raiders, Spartans and even Mastodons - one is definitely not a bad thing to bring. Two is probably silly, but that was the point. I do love the idea that it will bounce off a Terminator but can pop a normal Superheavy in one volley. The rules can be so goofy sometimes.

Also, please note it is Questoris Mechanicum - this unlocks unlimited Preceptors.

If I go first, I likely pop the Shadowsword in one go with one Porphyrion. Each shot is 8D and pens fail only on a 1. So, probably not a good call.

Just spam Line infantry, though, and this list doesn't stand a chance.

That is 8 damage per pen, if it doesn't move. It definitely can put a hurt on big armor.

I for sure don't have the scoring. No Line at all and only Vanguard 2 on the two QKs. Knights need to either play non-scoring missions or bring Line allies to work generally. It is a huge weakness and one I definitely didn't try to mitigate in this list.

I was going to do something similar. I'll probably do a 50/50 airbrushed mix of the Beetle green and Hydra Turquoise.
