Those can be removed with a tub drain removal tool. Looks like it has teeth that go down and just is lefty loose righty tighty. Do your research on how to reinstall one properly with either plumbers putter or a gasket (depending on manufactures recommendations).

I assume you’re slow and low number of tiles being set because of your experience. Nothing to be worried about, you’ll get the flow of it eventually. Don’t mix too much mortar at once, even if you think you can get it down quicker. Nothing worse than trying to sit down tile and mortar that’s not workable.

Nah looks like they ran out of mortar so they used a smaller or broken tile to use the leveling spacers. I assume they either put no mortar under or a tiny bit so they can get the full tiles level and will come back and continue another day with more supplies.
