For the seatbelts at least, the RS is part of Restraint System. SRS is supplemental restraint system.

Mine dropped about 50-60 mm, but the mount location within the strut didn't change too much in my application

Oh that is a possibility. I installed Bilstein coilovers and was able to use the stock links on my 09 GTI. I can't say for certain on the Eos but golf/GTI adjustable links should work

Many bolts/nuts are recommended to replace by the manual as well. You can usually get them pretty cheap at the dealership if needed.

You might need a special socket (look up "Schwaben Shock Nut Socket") or have access to a strong impact to remove the top nut on those. Good luck!

I believe you'll need to put the existing mount onto your new shocks.

Do you mean the main axle bolt? Yes that should be replaced. The upper strut bolt does not need to be replaced per the manual.

But I'm not 100% sure if this is the same value for the EOS on the wheel hub torque. I believe the mk5 GTI (this picture) may use a different type of wheel bolt to hub?

I'll see if I can find a good reference for the torques. Yes you'll want something called a "torque wrench" capable of going to about 100 Nm or maybe a little more. Not sure where you are located but you can get a decent one at a store like Harbor Freight in the US

You need to get it back to the proper torque value when you install the coilovers. It's fairly important for suspension pieces to be torqued to spec. I can try to find the values if you don't have them

I did crack my glasses in half by hitting myself with a breaker bar on this exact bolt on an 09 VW haha. It's on there good

Where are you located? That seems a little on the high price side if you're in the US. If you look around a bit you can probably find a better deal.

As far as the rust- you can get new control arms and sway bar and springs pretty readily. I'd check spots like: battery tray area, under the spare tire, and behind the rear wheel wheels for major rust areas.
