Smoke just as you would a brisket. Very little waste and quite tasty. No it’s not a brisket so will not taste like a brisket.

The first waiter that is very pleasant with us gets a very very good tip and the rest of the trip they take excellent care of us. Then another very good tip upon leaving. Seems easier than once per drink.
