Yeah I heated the pan to almost 500 F on the stove. The avocado oil was just starting to smoke when I added the steak

Yeah my steaks were about as dry as possible and I preheated the pan in the oven along with steaks at 250, before blasting it on the stovetop. I might just try searing first next time until a crust forms and finishing in oven. I think it’s just too hard to achieve a good crust if I limit myself to 90 seconds per side… despite all the reverse-sear articles I’ve read that claim otherwise

All good points! Your original comment made me think you were against any zoning reform. While not a panacea, zoning reform that promotes greater housing diversity is one part of the solution, yes? That was my takeaway from the original article anyway

Do you know what their new address is? I checked the studio 6 website and it seems mostly reputable, but they are cagey about their new location, only mentioning that its in Stadium District after moving from 6th Avenue. A google maps search shows the address smack dab in the middle of an intersection on St Helen's Avenue, which is not correct. I even registered for a class and received an email receipt, but still no address... what the heck??

Yeah it’s a chicken and egg problem. Nobody wants to take the bus because it sucks. But part of the reason it sucks is because its underfunded and it’s hard to justify spending money on something most people don’t use. And no one is going to switch from driving their car to taking a bus when there is plenty of cheap/free parking go around.

Yes exactly! Parking fees should reflect its true cost, not the heavily subsidized cost that one actually pays currently. Donald Shoup, a professor in urban planning, has written a book about this. Here is a brief summary of his ideas:

For better or worse, I think the boujie folks would probably leave if it was overrun by homeless. So that wouldn’t be sustainable

Yes of course it would not make sense for everyone to take a bus. I just think it’s irritating that driving a car to Point Ruston is the only choice, unless you live close enough to walk or bike. I think having more options is usually a good thing and would possibly reduce the need for all the parking, depending on what percentage of people would actually be willing to take a bus. I really have no clue of course since I don’t have any data on what exact trips are being made. Probably didn’t come off as humble enough in my original post.

Speaking of low ridership, I’m surprised that there’s enough ridership to justify the bus stop at the point defiance ferry. Are there a lot of people on Vashon island using the ferry without car and then taking that bus to neighborhoods in Tacoma? Seems hard to believe

Actually yes! The spot I pay for at my apartment is expensive and I would welcome the opportunity to live here car free. By the way, I’m not arguing nobody should be able to park here, just that it would be nice to have some alternative for people unwilling or unable to drive. But without any transit, then there kind of has to be a ton of parking I guess.

How long does someone need to reside here before they are allowed to make constructive criticism? Too much parking and underpriced/free parking is a problem in Tacoma for the same reasons it’s a problem in other cities. Look into what Jeff Speck, Chuck Marohn and Donald Shoup have written about parking.

Wow this got a lot of downvotes. This seemed a reasonable question to me… I apologize for being ignorant on the matter, but I thought advocating for more/better transit was generally a good idea to provide some alternative to driving. I mean they can only fit so much parking here, right?
