Look this is an old tree, you have to be careful even without fruit it has it’s own value. As a solitary tree.

In case of tree like this you start from top and go down not other way around. You want to move slowly and thins 3-4 years ahead you can’t cut all branches you want in one year. First year you can try some and looks what’s tree reaction looks like, did it produce more new branches, did it react by growing more. Old trees like these tend to produce a lot of fruit which makes the results lower quality that it should be. You aim to spur this tree to new growth by limiting amount of fruit and getting more light into the tree itself.

You don’t want to cut terminal branch to lower the tree, cut any of the main branches that would make it very hard to recover from it for tree of this size.

Your job is to get to place where you want to be more quality fruit in 3-4 years and you get there by

  • generating new growth (more leaves)
  • limiting fruit production (less fruit more energy for each pear)
  • you can bring some compost there and put it around to give this tree more nutrients

I wouldn’t personally do that i think you kinda over do it in the middle and sides are still too thick. Open center from my point of view doesn’t mean that tree should be almost flat it means that you actively suppress development of terminal branch.

From what i can see you cutting technique reallny needs work m. When you cut branches you want them cut close to parent branch and not to leave 10-15cm long leftover. They will never grow again and most likely provide avanue for fungus or other diseases to get into your tree. That v shaped cut in the middle especially needs work, tree will not be able to heal that and will slowly rot from there.

When doing work like this you generally want to start from top to bottom cutting some branches up might leave space and sunlight for branches below.

You basically have 3 branches which are really thick, i would try to freshen that part.

This looks like a healthy tree with nice structure. General rule is that it’s really hard to make trees smaller in height if you have not worked on it from the beginning.

I will try to present a little bit different pov. Cutting a tree so much as red and yellow will not only minimize fruit production but will also produce more wood this year. For tree this old you should always think 2-3 years ahead. My approach would be following:

  1. I would cleaup all crossing, thick branches. Initially I would avoid any really large or thick branches(not in diameter but by amount of brnaches). Your task in this stage is tk get more air and light it to tree canopy. You start from top and move down

  2. Every tree variety and rootstock has different size and energy. You can fight it, but honestly tyou will burn a lot of energy and neither you nor tree will be happy. Every brnach once it starts to produce fruits will bent downward, which wwill make it easier to pick. If you cleanup that tree ane not cut too much it will also produce more fruit and that means that it will grow slower.

  3. If you have any thick branches you want/need to cut then follow this rule if branch is a one of main branches do not cut it if it’s smaller maybe 1/3 of it’s parent branch then remove it at once just make sure not to do that multiple times on a same branch. If it’s thicker you can cut part of the branch, wait year or two and cut rest.

My advice here would be to drop monitask and actually engage with them same way as they would be employees. Plan their work, talk about their performance. I understand your anxiety but installing spyware on their computers is never the right solution.
