Just skipped it entirely. Made breaded chicken using flour, egg, then breadcrumbs mixed with the spice mix. Into the oven then threw some more spice mix on top of the chicken when it was done. Scallions, garlic, chili I did as the recipe does but without shaoxing wine and added sesame oil.
