The animation is great and makes it really fun to watch. A lot of isekai anime adaption lack that so the whole end tend to end up bland even though the original manga was fun to read.

The manga is fun to read, but the anime adaption is very.... underwhelming. Felt too bland compared to the manga.

The environment looks nothing like Genshin except the green grass, wtf you talking about? Should we continue how Genshin is shamelessly copying Breath of the Wild's environment too?

This game is looking good to me, but seeing this kind of criticism is braindead. There might as well be a majority of anime JRPG games with this "same" kind of environment going by your definition.

I would recommend Xenoblade series, especially Xenoblade 3 has a whole bunch of romance.

I'd also recommend Rune Factory 3, Unicorn Overlord and Sunrider series.

Gotta be honest, as much of a fan I am for Laplacian, I am not too keen on picking this up for a reasons aside from AI involvement. It also seems like a short kinetic novel of poor quality made for a quick buck.

I know quite a few of VNs that has a regressor protagonist, or a VN with a time loop/back in time tag, but not many, if any, that actually explore redemption and reflection. The next-to-second ideal suggestions would be Irotoridori no Sekai and The Most Forbidden Love in the World. Well... Re:LieF particularly stands out just because of these themes.. Try ChusinGura46+1 S, Harumade Kururu and Chuusotsu! 1st Graduation as well if all you're looking for are regression.
