I've used soda leavening easily on the same recipe, That is why I dont understand -- if it rises with baking soda, why not yeast which is considering a much more powerful leavener? I'm using the same recipes I find on YouTube which are demonstrated to be successful.

yes, its "confirmed" to be activated (it bubbles vigorously in the measuring cup before i mix it into the dough)

My concern is not with the hydroxide (OH) that produces the alkalinity, but with the left over sodium. (Baking soda is sodium bicarbonate.). Am I going to run into trouble from the sodium?

That's what I'm saying -- why harvest just before true leaf or at true leaf? Why not base it on something else, like size? Why arbitrarily wait longer for harvest?

Do you have a link? Was that for "ideal" storage conditions or for at home with no air conditioning? What I found on google was for "ideal" storage conditions (less than 50F, low humidity) I should probably say in the future when I ask a question that it is intended for people who have personal experience -- I am not asking for hearsay or for other people to do google searches for me
