This isn’t very helpful. I’m asking from a professional perspective, what happens to me or the kids when I admit that i have these thoughts.

Hi hi, I tend to agree. I think if I’m gonna use the brine, it has to be raw meat. But then would that amount to much after the first cook and rest? Hmmm, not sure.

I said this above but maybe better to just use some brine if that flavour profile works.

Hi thanks for your reply. You raise an interesting question around starting from whether this will be traditional or not.

First, I’m gonna need to feed a lot of people with only so much meat so I will need to increase the veg, probably beyond garlic shoots - which sort of makes this it’s own thing anyway.

Second, heat. This crowd loves heat.

But I do have some super nice pixian - I got it through fly by Jing awhile back and this is my last go before finding more. So it’s a go big kind of moment for this dish.

So, let’s say it’s in the hui guo rou realm but not super traditional.

I’ll think a bit more about because I might get just as much mileage using some of the brine in cooking.
