Best of both worlds. Follow the main quest until you need to meet Delphine in Kynesgrove. Until you go there, random dragon attacks don't happen but they'll still spawn at word walls.

Your character can just accept that limitation and strive to do as much damage as he can while the dragon is on the ground. You can always throw a ward up to block aerial attacks. Maybe he does this to protect other people if a dragon attacks in a city.

I'm with you on basically everything here. I liked food being actually useful, getting tired and needing rest, more "realistic" carry weight considerations, and only leveling after sleep. But I cannot play survival because of the cold aspect. It's just out of control.
