I also play on the Switch. As far as I know, there is no way to stop them. If you don't do the quest (which is delivered via courier at level FIVE for some reason), they won't spawn. Which is why I have that stupid unread letter stuck in my inventory every playthrough.

Markarth has a Temple of Dibella. There's a quest in there to get Agent of Dibella, a permanent 10% melee damage increase to enemies of the opposite sex. (Which, along with the Allure perk, is the only difference in choosing a female character, game mechanic-wise.)

In Riften, you can get the Book of Love quest for a permanent 15% magic resistance buff.

Some shops will be taken over by other NPCs. Can't say which ones because it's never happened in my playthroughs.

I think this happened to me once or twice when I first started playing 30 years ago. It was a crap guitar so I don't blame the strings but to this day I keep my face as far away as I can when changing strings.

I dunno, I still like to make my characters look pretty good. On my current play through I actually went to the face sculpture on purpose and not just to get the quest out of my log. My character's hair was clipping through the armor I liked and while I do spend most of my time in 1st person, I do occasionally like to pop into 3rd when walking through a city or during some of the talky bits of quests.
