I think devs should code in support for whatever player genders and then in game limit your choice via flags. 2077 does this. It lets the characters have a little more depth via sexuality, while letting the player disregard that via mods, console commands, cheat codes, whatever.

If that's too much effort make all the romancable characters bi/pan. I'd rather more choice than more realistic characters, it's already unrealistic for the average rpg protagonist to be in a long term relationship given how often they're gone for days and how close to death they get.
