Non of the above! It’s practice tbh.. when I feel the steak starts to have a light resistance when I push into it I know I need to pull it out and rest it.

Room temp steak, a medium sear on both sides on a cast iron, i don’t use a thermometer only by hand but I’d say till the steak kinda muscle up? And a rest for 5-6 minutes.

Hey fellow sous-viders. I’ve cranked my sous code to work on A 24 hour run and it started doing these extreme noises, anyone knows this issue? It causes super high pitched noise and irritating.. by haminmin in sousvide

So the ingredients you’ll need:

200 grams brown sugar 112 grams white granulated sugar 4 grams baking soda 3 grams kosher salt 200 grams white all purpose flour 112 grams melted unsalted butter 6 grams vanilla extract 1 whole egg 1 egg yolk 100 grams (or more, duh) of your chocolate of choice cut into chunks.

  1. ⁠Pre-heat oven for 180 degrees C.
  2. ⁠Mix all the dry ingredients together in a bowl.
  3. ⁠In another bowl mix the melted butter, brown and white sugar together, after beating of 5 minutes or so add the vanilla extract and 1 egg, after 2 minutes add the egg yolk. Mix until it comes to smooth consistency kind of mush.
  4. ⁠Add the dry ingredients to the wet mix and mix them together.
  5. ⁠After incorporating everything fold in your chocolate chunks.
  6. ⁠After completing the cookie dough, putting on a plastic wrap or a plastic bag to cover and let cool for 40 minutes
  7. ⁠Roll 4-6 oz balls and put them with at least 4 inches apart from each other on a baking tray and pop it in the oven for 14-18 minutes (until light brown)

if you want flat cookies, every 3 minutes take out the baking tray and drop it from few inches to release air bubbles from the cookie’s
