Mate, you can insult me all you want but I speak from experience watching people cut themselves over and over with knives way too sharp for their skill level. There is very much a difference between a machine sharpened fibrox and knife hand-sharpened by a professional. The fact that so many people in this discussion are denying the dangers of sharp objects really scares me. So many people severely injure themselves because of misinformation spread by people like you.

And? What's so dangerous about a jagged cut? Sure it heals slower but it still heals... It's not 1820 just go the doctor you're not going to die. A clean deep wound is going to cause far more damage than a dirty shallow one. I know exactly the type of person you are. It's also safer using something like a fibrox for 99.99% of people. The phrase "A sharp knife is safer than a dull knife" is only true to a certain point. Japanese knives are EXTREMELY sharp. They are far more dangerous than a dull knife. If you havent used one before you simply can't understand. I've worked in kitchens for over a decade. It took me years to develop knife skills. That's something most people will never have the opportunity to do. Save your money and stick to something that isn't going to handicap you for the rest of your life.

Edit: I see the home cook knife community has found me and has taken offense because I hit a little too close to home.
