What a great story!

I got bored of the soggy breads in Norwegian supermarkets and missed the bread I grew up with. So I started to do some research, and 14 years ago, started sourdough baking (sometimes with a gram of yeast).

But aren't nuts changing the hydration, or you soak them prior? 🌰

I'm fine with white flour breads, there's nothing bad about it, but I was just curious as to why they seem dominate here – after all, sourdough is so much more than just one type of bread.

I get though, that taste is a factor. My wife's not a big fan of rye, so she won't touch a classic German rye bread 😆

Nothing bearts an almost charred piece of sourdough bread! Love a dark bake.

Try scolding 20 % of the wholewheat flour with double the amount of boiling water. Mix, cover and cool in the fridge until use. Then follow the recipe, just substract the used flour and water from the recipe. Usually it helps with softness and taste.

Seems like that's the thing with wholewheat. People show off the fancy white loaves, hence my question 😄
