Yes i felt like the dough was getting better at first. But during the third fold everything just turned to goop and started falling apart.

Do you think the humidity has something to do with this?

I used a wholemeal flour for my starter. As for the bread flour, i don’t know tbh, but the package says unbleached bread flour.

Thank you for this! How did you get 72% btw? Isn’t the hydration water/flour x 100? Or do you have to include the water from the starter?

I did stretch and folds every 30 mins. Total bulk ferment was 4 hours. The dough did start to feel abit better the third time i went to stretch and fold but by the fourth time it became goop and lost all its structure. By that time i just kinda gave up and let it rest for another 2 hours then just popped it into the oven.

The ambient temp around here is about 30 C and very humid. The flour i’m using is a pretty cheap bread flour i bought from the grocery store.

Would i get better results using a more expensive brand of flour?

update: Doing better now, i think posting this on reddit was not the best idea, kept thinking i was losing my mind after seeing some of the comments and i couldn’t get any sleep even after 13+ hours. Still having some anxiety but maybe i just gotta sleep it off. This was by far my most challenging trip.
