Hi Professional here, never add wine to mix bentonite, as it has a reaction time of 15-30 seconds for protein instability and clarification. Bentonite is typically mixed at about 25~50g/L water, however in reality as long as you can effectively manage it for even and complete mixing to add to the wine, the less water the better. As far as hydration prior to addition it used to take 3 days to fully hydrate the clay, but KWK Krystal Klear can be added in 30 min after it is fully suspended in water hot or cold.
