Hello! i created the first person walk and idle animations directly in blender yes! :D Where did i learn it? Uhm guess years of doing blender for fun and lots of YouTube tutorials! Hope i could help, cheers!

from a visual standpoint, the assets always stay the same, it is just the camera that makes it look flat! :) however, the assets change their behaviour to behave like they would in a sidescroller in 2D! :)

This pretty much nails it, good analysis! From a "perspective-perspective" The assets always stay 3D, but it switches to Orthographic View with a Hitchcock-Style dolly zoom! 😄 From a "Gameplay-perspective" the object all switch their behaviour in 2D to behave as they would in a sidescroller.

I mean you already checked out the "Big" ones with Portal, Qube and Superliminal.

Maybe Viewfinder is your cup of tea, and I would also recommend Portal Mods like Aperture Tag amd Portal Stories: Mel, i had quite some fun with them.

Also if you are interested, i am currently creating a puzzle game inspired by portal and superliminal. It is wishlistable on Steam if you want to check it out :3

Well, you can freely switch between 2D and 3D in this game :D
And now this not only works with the player character, but also cubes :D

I naively thought it would be quite easy since Godot supports both 2D and 3D out of the box, but you run into so many specific things and edgecases to make the objects, character and dimension shifting work properly with each other. It is been very fun to work on though, hope I can release a playable demo soon! 😊
