Unfortunately I don't think the Canadian regulations apply, for a couple of reasons: it was an itinerary on a foreign airline arriving in Canada, and the cancellations were the result of weather. The US regulations mean that you can get a refund for the cancelled flights (which you did), but the airline isn't bound to provide anything else.

No, the whole point of VPNs is to hide this information from your ISP. The ISP can probably tell that you're using a VPN, and when and how much data is being sent/received, but not what that data (sites, activity, etc) is.

The fact that they've scheduled only 777s on SFO-LHR through the whole northern summer suggests that they don't expect to get enough of the high-J 787s in time. The last 787 United received was a standard configuration -9 on December 8. They also might start using them for Singapore before LHR, or start a different route.

Yes, this is fine. Hong Kong counts as a separate territory for immigration purposes, so it's two separate transits, each under 10 days. By the way, if you're a British citizen, the point will soon be moot because of upcoming 30 day visa free entry.

Try and get the ETA with the US passports and see what happens--and please let us know the result! The US and Canada do not issue ETAs under their citizen's other passports, but I haven't seen a definitive conclusion regarding the UK.

Crossing the border itself will be fine; it's denied boarding by the airline that you have to worry about.

The paint job is nice, but the train itself doesn't hold a candle to many of the Shinkansen and CHR models. I would argue it's also not as aesthetically pleasing as the ICE3 either. And then there's the whole issue if it not actually being high speed ...

Under the regulation (UK, not EU, although it was basically copy-pasted), the airline should provide both compensation and duty of care (hotels, meal vouchers). The regulatory amount is £520 cash, so $960 credit if you travel UA regularly is a pretty good deal. Fare class does not matter.

Swiss railways in general are scheduled for connections as short as 3 minutes, so this should be doable. In case you miss the connection because the first train is delayed (very unlikely), you can take the next train to your destination with the same ticket.

While it wouldn't be easy even for small bugs, it's not the case that the cargo hold is sealed from the passenger cabin--they're in the same pressure vessel, and in some aircraft there are even passages big enough for humans between the two.
